Banana-Almond Meal-Oatmeal Muffins
3/4 cup flour (I use sprouted wheat)
3/4 cup quick-cooking oats
3/4 cup almond meal or almond flour
3/4 cup almond meal or almond flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
2 eggs
1/3 cup vegetable (or coconut) oil
1/4 cup milk (or non-dairy milk)
1/2 cup chocolate chips
1/4 cup milk (or non-dairy milk)
1/2 cup chocolate chips
Mix all ingredients together and divide into 12 muffin cups. Bake at 350 for 17-20 min.

another hat for Elizabeth--this time actually the one. The last one came out a bit small. How do I know that it's too small considering this is a surprise gift for her? I tried it on her in her sleep the other night. :)

It is so rainy outside here as well. I'd love to get my hands on the recipe for Finn's favorite muffins...they sound like something I'd love! Here's to sunny days in the future!!!!
