Yay, fresh farmer's market lunches are back again, and we thoroughly enjoyed our first lunch of the season assembled completely from produce bought at our local farmer's market.
The available tomatoes and cucumbers are still greenhouse grown, but I'm happy to have them. They are just a promise of what is to come in another month or so when the heirloom varieties will appear on the market tables.
Tomato Cucumber Salad
1 large farmer's market tomato, diced
1 large farmer's market cucumber, diced
scant 1/4 cup sliced scallions
1-2 tbsp olive oil
1-2 tbsp raw apple cider vinegar
1/4 tsp sugar
salt and pepper to taste
Peanuts have started showing up in several stalls. These are the plain roasted and salted variety, but the kids helped me shell some raw black peanuts earlier in the week. I'll need to figure something out soon to make with those!
Strawberries are now out in full force in our area. I only bought a quart for our lunch today because I'm planning a picking excursion to come soon. They were absolutely delicious though! I can almost smell the jam now!
Last, but not least, a new gluten-free bakery has started selling cookies and other bakery items at the farmers market. We bought snickerdoodle and molasses cookies to share after our simple lunch. Yum!

ReplyDeleteI too love that your Saturday Lunch series is back. I love seeing what you make and jotting it down for future tries. This I can only imagine just tasted so fresh and delish. And those cookies looking yummy. Wish we had gluten-free bakeries in my area, but on searching their website it seems I might be able to order from them, so that's a plus. I'd check out our local farmers market for gluten-free options, but we were hit bad by those tornadoes not long back and one of the two in town now has damage so will have to sadly wait on that.
